How to make Tarhana Soup? Tarhana soup is a type of soup that is very popular in traditional Turkish cuisine. Tarhana soup, which is very practical to make, is a healthy and nutritious option. Here are the preparation and benefits of tarhana soup:

Ingredients:

  • 1 cup tarhana (dry tarhana mix)
  • 4 cups water or vegetable/chicken broth
  • 1 medium-sized onion, finely chopped
  • 2 medium-sized tomatoes, peeled and diced
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes (optional, for some spiciness)
  • Salt and pepper to taste
  • Fresh mint or parsley leaves for garnish (optional)

Instructions:

  1. Prepare the Tarhana Mix:
    • If you have a homemade tarhana mix, skip this step. Otherwise, take 1 cup of dry tarhana mix and place it in a bowl.
  2. Rehydrate Tarhana Mix:
    • Pour 2 cups of water or broth over the tarhana mix in the bowl.
    • Stir the mixture thoroughly, ensuring all the tarhana is evenly soaked.
    • Let it rest for about 15-20 minutes to rehydrate while you prepare the other ingredients.
  3. Sauté the Onions:
    • In a large pot, heat the olive oil over medium heat.
    • Add the chopped onions and sauté until they become translucent and lightly golden.
  4. Add Tomatoes and Tomato Paste:
    • Stir in the diced tomatoes and cook for a few minutes until they soften.
    • Add the tomato paste and mix well, combining it with the onions and tomatoes.
  5. Pour in Water/Broth:
    • Add the remaining 2 cups of water or broth to the pot.
    • If you prefer a thinner consistency, you can add more liquid.
  6. Add Tarhana Mix:
    • Pour the rehydrated tarhana mix into the pot, stirring continuously to avoid any lumps.
  7. Seasoning:
    • Season the soup with salt, pepper, and red pepper flakes (if using) according to your taste preferences.
  8. Cooking the Soup:
    • Bring the mixture to a boil, then reduce the heat to low.
    • Let the soup simmer for about 15-20 minutes, stirring occasionally to prevent sticking.
  9. Garnish and Serve:
    • Once the soup reaches your desired consistency, turn off the heat.
    • Ladle the tarhana soup into serving bowls.
    • Garnish with fresh mint or parsley leaves if you like.
