Lamb tandoori is a traditional Turkish dish usually prepared by cooking a bone-in lamb or lamb meat over low heat for a long time. Ingredients:
- 1 kg lamb meat (preferably shoulder or leg)
- 2 large onions
- 4 cloves of garlic
- 1/2 cup vegetable oil (preferably olive oil)
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
- 1 teaspoon cumin
- Juice of 1/2 lemon
- 2 bay leaves
- 2 cups hot water
Preparation:
- Wash the lamb meat thoroughly and remove excess fat. If it’s in large pieces, cut it into suitable pieces.
- Chop the onions into large pieces and crush or finely chop the garlic.
- In a mixing bowl, prepare a marinade sauce by mixing vegetable oil, salt, black pepper, red pepper flakes, cumin, and lemon juice.
- Thoroughly coat the lamb meat with the prepared marinade sauce. If you have time, you can marinate the meat with this sauce for a few hours in the refrigerator. However, if you want to cook immediately, letting it sit at room temperature for about 30 minutes is sufficient.
- Preheat the oven to 180°C (356°F).
Cooking:
- Place the marinated lamb meat in a large baking tray or pot.
- Add the chopped onions and crushed garlic on top.
- Place the bay leaves inside the pot.
- Pour the hot water over the meat, but not enough to completely cover it.
- Tightly cover the pot with a lid or aluminum foil.
- Cook in the preheated oven for approximately 2.5 – 3 hours. The meat should be tender and easily falling apart.
- Remove from the oven and uncover. If the meat is not browned on top, you can broil it under the oven’s top grill for an additional 10-15 minutes.
- Serve hot, and you can accompany it with rice or bulgur pilaf if desired.
