Preparation:
- Prepare the bulgur: Place the fine bulgur in a large bowl. Pour hot water over it and stir. Cover the bowl and let the bulgur soak for about 20-30 minutes until it absorbs the water.
- Chop the ingredients: Finely chop the onion, spring onion, and parsley.
Making the köfte:
- Prepare the köfte mixture: To the soaked bulgur, add the red pepper paste, tomato paste, chopped onion, spring onion, parsley, olive oil, isot (if using), cumin, red pepper flakes, salt, and lemon juice (if using). Mix all the ingredients thoroughly.
- Knead: Use your hands to knead the mixture until all ingredients are well combined. Make sure the bulgur is fully hydrated and the mixture has an even texture. If the mixture seems dry, you can add a little more water, but be cautious not to make it too wet as it can affect the consistency of the köfte.
- Shape the köfte: Take small portions of the köfte mixture and roll them into balls or shape them as desired. You can wet your hands slightly to prevent sticking while shaping.
Serving:
- Prepare the serving: Wash and dry the lettuce and arugula leaves. Cut the lemon into wedges. Slice the pickles if using.
- Presentation: Place the köfte balls inside the lettuce leaves. Serve with arugula leaves, lemon wedges, and pickles on the side.
