Water Pastry is a traditional type of pastry from Turkish cuisine. It takes its name from the use of a mixture of yoghurt and water in its filling. This pastry, made with a mixture of yoghurt and water between thinly rolled dough, has a multi-layered and light texture. Su böreği is a flavor generally preferred for breakfasts, special invitations or special occasions.

Ingredients:
For the Dough:
- 4 cups of all-purpose flour
- 1/2 teaspoon of salt
- 1/2 cup of vegetable oil
- 1 cup of water
Filling:

- 1/2 cup of vegetable oil
- 1 cup of water
- 3 eggs (one yolk separated for brushing)
- 1/2 teaspoon of salt
For Brushing:
- 1/2 cup of vegetable oil or melted butter
Preparation:
1. Dough Preparation:
- In a mixing bowl, combine the flour, salt, water, and vegetable oil.
- Knead until you get a soft dough.
- Let the dough rest for 10-15 minutes.
2. Filling Preparation:
- In a separate bowl, mix together yogurt, water, vegetable oil, 2 eggs, and salt to create the filling mixture.
3. Rolling Out the Dough:
- Divide the rested dough into small portions and roll each portion thinly on a floured surface.
- Place each rolled-out dough on a parchment paper.

4. Layering:
- Spread the yogurt mixture evenly over the first rolled-out dough.
- Place another rolled-out dough on top and spread the yogurt mixture again.
- Repeat this process until you achieve the desired number of layers.
5. Creating Layers:
- Separate the egg yolk from one egg and set it aside for brushing the top layer.
- Roll the layered dough into a log shape.
- Cut the log in half lengthwise.
- Twist the two halves together to create a spiral shape.
6. Baking:
- Brush the separated egg yolk on the top for a golden finish.
- Bake in a preheated oven at 180 degrees Celsius until the top is nicely browned (approximately 25-30 minutes).
7. Serving:
- Once out of the oven, let the water borek cool down.
- Optionally, drizzle with additional vegetable oil or melted butter before serving.
- Slice and serve the water borek.
