Vegan meatballs, also known as vegan meatballs, are a type of meatball (meatball) prepared without using any animal products. Similar to traditional meatball recipes, vegan meatballs are often made using plant-based ingredients, including legumes, vegetables, grains, vegetarian protein sources, and spices.

  • 1 cup red lentils (cooked)
  • 1 cup bulgur
  • 1 medium onion (grated or finely chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup finely chopped parsley
  • 1/4 cup finely chopped fresh mint (optional)
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 tablespoon red pepper paste
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • Salt (to taste)
  • 1 cup breadcrumbs (adjust consistency as needed)

Preparation:

  1. Start by cooking the red lentils and bulgur separately. Boil the lentils until soft and drain any excess water. Soak the bulgur in a little hot water until it absorbs and becomes soft.
  2. In a large mixing bowl, combine the cooked lentils and bulgur.
  3. Add the grated or chopped onion, minced garlic, finely chopped parsley, and mint (if using) to the bowl.
  4. Mix in the tomato paste, red pepper paste, olive oil, cumin, black pepper, and salt. Stir until all the ingredients are well combined.
  5. Use your hands to knead the mixture into a meatball consistency. If the mixture is too wet, add breadcrumbs gradually until you achieve the desired texture.
  6. Take portions of the mixture and roll them into balls, shaping them with your hands.
  7. Place the formed meatballs on a baking sheet lined with parchment paper.
  8. Bake in a preheated oven at 350°F (180°C) for about 25-30 minutes, or until the meatballs are golden brown.
  9. Serve the vegan meatballs hot. You can serve them with yogurt or tomato sauce on the side if desired.

This recipe utilizes protein-rich and fiber-packed ingredients like lentils and bulgur to create a healthy and flavorful vegan alternative to traditional meatballs. You can adjust the spices according to your taste preferences or add different herbs and seasonings for variation. Enjoy your homemade vegan meatballs!
