Instructions:
- Start by washing all the vegetables. Dice the tomatoes and cucumbers into cubes. Slice the red and green bell peppers thinly. Slice the onion into thin rings.
- In a mixing bowl, combine all the diced vegetables and fresh herbs (parsley and mint).
- Season with salt and black pepper. Then, add olive oil and lemon juice (or vinegar).
- Gently toss all the ingredients together using a spatula or a spoon. Ensuring that the salt and spices are evenly distributed.
- Finally, add the fresh cheese pieces on top of the shepherd’s salad. You can crumble the cheese or cut it into cubes.
- Let the salad rest in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Before serving, you can drizzle a little more olive oil on top of the salad and garnish with fresh mint or parsley leaves.
- Serve your shepherd’s salad with bread or alongside other appetizers.
Notes:
- To enhance the flavor of your salad, you can add extra ingredients such as black or green olives. Pickled peppers, or arugula.
- Instead of lemon juice, you can use pomegranate molasses or apple cider vinegar for a different taste.
- Shepherd’s salad can be served as a side dish with main courses or as a light lunch or dinner on its own. It’s also great for barbecue parties or picnics.
