Russian salad, also known as Olivier salad, is a popular dish in Turkish cuisine often served on special occasions, gatherings, or picnics. Despite its name, “Russian,” it has origins that trace back to a Belgian chef of Russian descent named Lucien Olivier, who created the famous Olivier salad.

Main ingredients of Russian salad:
- Potatoes: Boiled and diced potatoes form the base of the salad.
- Carrots: Boiled and grated carrots add color and flavor to the salad.
- Peas: Boiled peas provide extra texture and a burst of sweetness.
- Pickles: Diced pickles contribute a tangy and sour flavor to the salad.
- Chicken or Beef: Thinly sliced or cubed boiled chicken or beef adds protein to the salad.
- Mayonnaise: Mayonnaise binds the ingredients together and gives the salad its creamy texture.
- Salt and Pepper: Seasonings such as salt and pepper are used to enhance the flavor. Other spices may be added according to preference.
Ingredients:
- 4 large potatoes
- 3 carrots
- 3 eggs (hard-boiled)
- 1 large bowl of Greek yogurt or mayonnaise (about 200 grams)
- 1 large bowl of canned peas (about 200 grams)
- 3 pickled cucumbers
- 1 teaspoon mustard (optional)

Instructions:
- Start by thoroughly washing the potatoes and carrots, then boil them in a pot of water. Cook until the potatoes and carrots are tender, usually for about 15-20 minutes. Drain them and let them cool.
- While the potatoes and carrots are boiling, boil the eggs in another pot. After boiling for about 10-12 minutes, set them aside to cool.
- Peel the boiled potatoes and carrots, and then dice them into small cubes. Similarly, dice the hard-boiled eggs.
- Dice the pickled cucumbers into small cubes as well.
- In a large mixing bowl, combine the diced boiled potatoes, carrots, eggs, pickled cucumbers, and drained canned peas.
- Add Greek yogurt or mayonnaise to the mixture. If you prefer a lighter option, you can use Greek yogurt. Optionally, add mustard and vinegar for extra flavor. Season with salt and pepper to taste.
- Mix all the ingredients thoroughly, ensuring the dressing coats all the vegetables evenly.
- Refrigerate the prepared Russian salad for at least an hour to allow the flavors to meld together.
- Before serving, you can garnish it with parsley or dill if desired.
