Delicious Seasonal Roasted Chicken With Vegetables means a baked chicken dish served with different seasonal vegetables. This recipe provides a healthy and delicious meal as it meets the protein requirement of chicken, while seasonal vegetables are rich in vitamins, minerals and fibre. For the Chicken:

  • 4 chicken thighs or breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Vegetables:

  • 4 medium potatoes
  • 2 carrots
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large onion
  • 1 tablespoon balsamic vinegar

For Serving:

  • Fresh parsley or cilantro

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 200°C (400°F). Grease a baking dish or line it with parchment paper.
  2. Preparation of Chicken:
    • Rinse the chicken pieces under cold water and pat them dry with paper towels.
    • In a bowl, mix together olive oil, minced garlic, salt, black pepper, and thyme. Rub this mixture all over the chicken pieces, ensuring they are evenly coated. Let the chicken marinate in the refrigerator for about 30 minutes.
  3. Preparation of Vegetables:
    • Peel and dice the potatoes. Clean and slice the carrots. Remove the seeds from the bell peppers and cut them into chunks. Slice the onion.
    • Place all the chopped vegetables in a large bowl. Add balsamic vinegar and toss them until evenly coated.
  4. Arranging Chicken and Vegetables in the Baking Dish:
    • Place the marinated chicken pieces in the prepared baking dish. Surround them with the prepared vegetables, arranging them evenly around the chicken.
  5. Roasting:
    • Place the baking dish in the preheated oven. Roast for about 45-50 minutes or until the chicken is cooked through and the vegetables are tender. You can check if the chicken is done by using a meat thermometer. The internal temperature should reach 75°C (165°F).
  6. Serving:
    • Once done, remove the hot and flavorful chicken and vegetables from the oven. Transfer them to a serving platter. Sprinkle freshly chopped parsley or cilantro over the top for garnish. Serve hot, and enjoy your delicious meal!
