Kadayıf: Made from thin strands of dough, kadayıf forms the base of kunefe. Kadayif is usually sold in strands and is used fresh.
Cheese: White cheese or curd cheese is used as the filling material of kunefe. Cheese is placed inside the kunefe and placed between the layers of kadayıf.
Sherbet: Kunefe is sweetened with sherbet to provide its sweetness and moisture. Sherbet prepared by boiling sugar, water and lemon juice is generally used.

Ingredients:
- 250 grams of shredded kadayıf (phyllo dough)
- 125 grams of unsalted white cheese or mozzarella cheese
- 125 grams of butter (melted)
- 1 cup of sugar
- 1 cup of water
- 1/4 cup of semolina (optional)
- Pistachios or walnuts for garnish
For the syrup:
- 1 cup of water
- 1 cup of sugar
- 1-2 drops of lemon juice
Instructions:
- Start by preparing the syrup. In a saucepan, combine water and sugar and bring to a boil. Once the sugar has dissolved, add lemon juice and let it simmer for 5 minutes. Remove from heat and let it cool.
- Use your hands to loosen the shredded kadayıf and mix it with melted butter.
- Spread half of the kadayıf mixture evenly on the bottom of a large skillet. Sprinkle grated or diced mozzarella cheese evenly over the kadayıf layer.
- Layer the remaining kadayıf mixture on top of the cheese layer and press down gently to flatten.
- Fry the künefe in the skillet over medium heat until the bottom is golden brown. Once done, flip it onto a large plate.
- Meanwhile, warm the syrup.
- Flip the künefe back into the skillet and cook until the other side is golden brown.
- Remove the skillet from heat and let it rest for about 5 minutes.
- Slice the künefe into portions and transfer them to a serving plate.
- Pour the warm syrup over the künefe.
- Optionally, garnish with chopped pistachios or walnuts.
