Instructions:
Preparing the Syrup:
- To prepare the syrup, take granulated sugar and water in a deep saucepan.
- Bring it to a boil over medium heat. Stir occasionally until the sugar completely dissolves.
- Once the sugar is dissolved, add lemon juice and let it simmer for 5-10 minutes. Then, remove from heat and let it cool down.
Making the Dough:
- In a large saucepan, combine water, milk, butter or margarine, granulated sugar, and salt.
- Stir until the ingredients come to a boil. Once it starts boiling, turn off the heat.
- Gradually add flour while stirring quickly. Be quick to prevent lumps from forming.
- Once the dough starts to come together and pulls away from the sides of the saucepan, stop stirring and let it cool down.
Frying the Dough:
- Once the dough has cooled down, heat the oil for frying. Wait until the oil reaches a temperature of 180-190°C (350-375°F).
- Take walnut-sized pieces of dough and roll them into balls between your palms.
- Lightly grease your fingers with oil and shape the dough into balls. This will help the dough to fry evenly.
- Carefully drop the dough balls into the hot oil and fry until they turn golden brown. Flip them occasionally using a spatula or spoon.
Soaking the Lokmas in Syrup:
- Using a slotted spoon or skimmer, remove the fried dough balls from the oil and immediately transfer them to the prepared syrup.
- Let the hot lokmas soak in the syrup for a few seconds to allow them to absorb the syrup evenly.
Serving:
- Once the lokmas have soaked up the syrup, transfer them to a serving plate.
- Optionally, sprinkle crushed pistachios or shredded coconut over the lokmas for garnish.
